Ingredients: 8 cups vegetable broth 1 medium sized red onion, minced 3 tbsp ginger, minced 6 cloves garlic, minced 1.5 tsp salt 1 bunch collards or other hearty green , ribs removed and leaves chopped into 1” strips ¾ cups unsalted peanut butter ½ cup tomato paste ¼ cup roughly chopped peanuts ½ cup dry chickpeas (black or kabuli) 1 sweet potato or other boilable root veg, cubed 1 turnip or other boilable root veg, cubed Hot sauce, to taste 2 scotch bonnet peppers

Directions:In a dutch oven --
1. Sautee aromatics -- red onion, then ginger, garlic, and salt 2. Add stock, with chickpeas and root veg, and bring to a boil 3. Add scotch bonnet and then simmer at medium low for 20 minutes Depending on your tolerance for heat and surprises, remove the scotch bonnet before serving. 4. Incorporate peanut butter. As the soup simmers, combine peanut butter and tomato paste in a separate bowl. After the 20 minutes of simmering, add 1-2 cups of the hot soup stock to the bowl. Whisk the mixture until smooth and return to the pot. 5. Add the collard strips, season with hot sauce as desired, and simmer for 15 more minutes on medium low, or until desired consistency. |
