5 pounds of Concord grapes
2 cups of water
1 (1.75 ounce) box of powdered pectin
7 cups of white sugar

In an 8-quart stainless steel pan over medium heat, combine grapes and water. Bring mixture to simmer, cook until skins begin to soften, and skins start to burst (about 5 minutes). Using a vegetable masher or large spoon, crush the grapes, then continue to simmer until the grapes are very soft, and break down (about 5 more minutes).

Remove pot from heat. Strain mixture through a fine mesh sieve lined with several layers of damp fine knit cheese cloth. Until you get 5 cups of juice (if you do not get exactly 5 cups, add a little water). Rinse and dry pot. Place pot on stove, and combine the grape juice and pectin, turn on heat to medium-high, and bring to a full rolling boil, stirring constantly. Add sugar, stirring constantly until completely dissolved. Return to full rolling boil stirring constantly. Boil for 1 minute, stirring constantly. Remove from heat, and ladle into prepare jars.
