24 Nilla Wafers
2 pkgs. cream cheese (8 oz. each), softened
3/4 c. sugar
2 eggs
1 T. lemon juice
1 t. vanilla extract
Fruit Preserves (I use Apricot or Strawberry)

Directions:
Directions:
Place wafers flat side down in paper-lined or foil-lined muffin cups; set aside. In a mixing bowl, beat cream cheese and sugar until smooth. Add the eggs, lemon juice and vanilla; beat well. Fill muffin cups 3/4 full. Place on a baking sheet. Bake at 375º for 15-17 minutes or until top is set. Cool on a wire rack for 20 minutes. Top each cheesecake with 1 - 2 t. preserves. Refrigerate until serving.
