Sweet potatoes, peeled and sliced (either in chunks or long fingers)
olive oil
salt & pepper, to taste
paprika
garlic powder
cinnamon

Directions:
Directions:
Set oven at 400ºF.
Peel the sweet potatoes and cut them up, either in chunks or in thin fingers.
Put sweet potato chunks in a bowl and pour enough olive oil to coat them.
Sprinkle them with salt, pepper, paprika, and garlic powder. Sprinkle with just a tiny bit of cinnamon.
Spray a cookie sheet with vegetable oil and spread the sweet potatoes on the sheet.
Bake for 15 - 20 minutes, total, but take them out and stir or flip the pieces on the pan to brown them more uniformly.
Test with a fork. When the fork enters the potato easily, they are done.
