1 cup flour
2 T. baking powder
1/2 tsp. salt
2 T. sugar
1 egg
1¼ cup milk or buttermilk
⅓ cup peanut butter (possibly melted?)
1 T. shortening (melted?) or oil

Notes: See her actual hand-written recipe and decide if the peanut butter or the shortening is what should be melted. Also, southern cookbook author Nicole Taylor is sure Parks meant buttermilk instead of milk, as that’s what you would traditionally use in southern cooking.

Sift together 1 cup flour, 2 T. baking powder, 1/2 tsp. salt, and 2 T. sugar.
Mix 1 egg, 1¼ c. milk, ⅓ cup peanut butter, and 1 T. shortening or oil.
Combine with dry ingredients.
Cook at 275 degrees on griddle.
