1 cup extra fine white cornmeal
½ teaspoon salt
½ cup water
Vegetable oil

Preheat oven to 450º
Prepare a cast iron skillet with ¼ inch of vegetable oil. Place pan in oven to begin heating the oil. As the oil heats, mix cornmeal, salt and water. Keep adding water a little at a time until mixture is thin enough to pour. Remove skillet from oven and pour batter evenly around the skillet. Return to oven and cook until edges are brown. Remove from oven and flip bread over with a spatula. Return to oven and cook for 10 minutes more. Serve hot.

VARIARIONS:
Add chopped green onions to the batter for a delicious taste.

The bread can be cooked in a skillet on top of the stove. Add enough oil to the skillet to allow the bread to float. Drop batter by large serving spoon into hot oil(350ºdegrees). For thicker patties add less water to cornmeal and pat bread with your hands.
