Whole wheat English muffin
Olive oil
Garlic powder or, better still, roasted spreadable garlic
½ to a whole Haas avocado
Tomato, chopped, enough to sprinkle on each muffin half
Red onion, chopped, enough to sprinkle on each muffin half
Salt
Pepper

Directions:
Directions:
Super simple. Split the English muffin and toast in the toaster. Once toasted, on each half of the muffin.
Drizzle with olive oil and shake on a little garlic powder.
Lightly mash a quarter to a half of avocado on top, however much you prefer. Sprinkle on the tomato and onions, then top with salt and pepper.

If you want to kick it up a notch, add a lightly-fried egg on top. Or, for a no-carb option, beat 2 eggs and pour them into rings (like a cookie cutter) in a pan on the stove to cook them in a round shape and use instead of the English muffin.
