Ingredients: Bechamel/cheese sauce: -1/2 stick butter - 4 tbls flour - 3ish c milk (I go heavy here and save extra sauce - 1/2 tsp cayenne - 1/4 tsp nutmeg - salt - 2 to 3 c shredded cheese (your choice- I use whatever I have eg cheddar, mozzarella, Parmesan, gruyere, goat cheese)
Shredded cheese to top pasta Bread crumbs 1lb pasta (we use whatever we have eg penne, cellentani, macaroni) Veggies if you want them (sometimes we’ll add broccoli)

Directions:1- preheat oven to 350ºF; lightly oil 13x9 baking Pan and set aside; boil pasta (remember to salt it!) 2- while pasta is boiling, prepare bechamel. In saucepan over medium heat, melt butter, add flour and whisk quickly until roux forms and cooks flour for a few minutes. Turn down heat a bit and slowly add milk, continuing to whisk quickly to ensure it combines with the roux and smooths out (no clumps!). Once all milk is incorporated, bring heat back to medium and add cayenne, nutmeg and salt to taste. Whisk until the mixture is slightly thickened, then add shredded cheese in small batches and whisk until it’s fully melted/combined. Remove from heat. 3- remove boiling pasta from heat 1 min before it’s fully done (eg - if box says 11 min, boil for 10), drain, and pour into baking dish. Pour cheese sauce over the pasta, pressing pasta down to ensure it’s all covered, but not “drowning” (you might have some sauce left...save it to use later!). Sprinkle remaining shredded cheese and bread crumbs on top, cover and bake for 20-30 min until sauce is bubbly. Can remove cover and brown the top during the last 5 min of baking. |

Notes: My kids love this dish- it’s hard to mess up, and always comforting to eat. We usually add veggies to it to make it a complete meal, and it’s great as leftovers the next day!
