Ingredients:  
6 Eggs, scrambled
1/2 -1 lb crumbled Breakfast Sausage, cooked and drained
1 bag of Tater Tots (Or 1 package of frozen hash browns) enough to line the bottom of the dish
1/2 Onion, diced
1/2 Green Pepper, diced
2 cups of Pancake Batter (mix with amount of water per package directions)
2 handfuls of Shredded Cheese (optional)

Directions:
Directions:
Preheat the oven to 375 F.
Place frozen potatoes on the bottom of a greased 9x13 glass casserole dish.
Put sausage and veggies on top of potatoes, then top with scrambled eggs.
Pour pancake mix on top of the casserole so that it covers everything in the dish. Top with shredded cheese if desired.
Bake for 35 minutes (or until pancake batter is cooked through).
