6 slices bacon, fry crisp and reserve grease
2 TBSP. cider vinegar
1 TBSP. (or less to taste) granulated sugar
1 large head of leaf lettuce
4 green onions, thinly sliced with some tops
4 thinly sliced radishes
salt and pepper to taste

Topping (if desired)
3 nice size tomatoes, largely diced
1 green finger hot pepper
½ medium onion, chopped (white or Vidalia)

In heavy skillet, over medium heat, cook bacon until crisp. Reserve the drippings; remove bacon and drain on absorbent paper towel. Break into ½" pieces.

Add vinegar and sugar to the drippings, stirring constantly, cook until bubbly hot.

Place lettuce, onions and radishes in large bowl. Pour hot vinegar mixture over the salad. Add bacon pieces and toss lightly. Season to taste with salt and pepper.

Topping (if desired)
Put chopped tomatoes in a strainer and lightly salt. Let sit for about 10 minutes. Chop a green finger pepper (or pepper of your choice). Toss tomatoes, onion and pepper together lightly and serve on the wilted lettuce.

Comfort food - Thanks to my mom. One of our favorite summer meals, growing up. Also comfort food when needed!!!

White beans with ham, over wilted leaf lettuce (with radishes and bacon)…homemade salsa , except we never called it salsa; it was "tomato stuff"...and of course, cornbread.

Our favorite thing to do is plate the wilted lettuce, making a center to put the beans on.

Southern comfort food always helps. Leftovers will be turned into bean soup tomorrow. Mom always served with fresh green onions, right out of her garden - Kay
