3 c flour
1 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
3/4 c shortening
1/2 c sugar
1c brown sugar
2 eggs
2 tsp vanilla
2 c grated zucchini
Optional: 3/4 c raisins, 1/2c nuts, 3/4 c chopped dates
Directions:
Directions:
Sift together 1st 7 ingredients.
Cream together shortening and sugars. Add eggs and vanilla.
Add dry ingredients alternating with zucchini.
Drop by teaspoon on greased cookie sheets.
Bake 375º for 8-10 minutes.
Cool on cookie sheets for8-10 minutes them remove to cookie rack.
