6 vanilla wafers
8 oz cream cheese
1/4 c sugar
1 1/2 tsp lemon juice
1/2 tsp grated lemon peel
1/4 tsp vanilla
1 egg
pie filling
Directions:
Directions:
Put wafers on bottom of 6 cupcake cups.
Combine cream cheese, sugar, juice, peel and vanilla with electric mixer.
Blend in egg.
Pour into cups.
Bake 325º for 25 minutes.
Cool, chill, top with filling.
