2 quarts water plus 1 c.
3 tsp. salt, divided
2 1/3 c. sifted flour
1 egg, slightly beaten

Directions:
Directions:
1. Bring 2 qts. water and 2 tsp. salt
to a boil in a 3 or 4 quart saucepan.

2. Sift together the flour with 1 tsp. salt.

3. Mix together the egg and 1 cup water.

4. Gradually add flour mixture to egg
mixture, stirring until smooth. (Batter
will be very thick.)

5. Spoon batter into boiling water by 1/2
teaspoonful, dipping spoon into water
each time. Cook only 1 layer of noodles
at a time; do not crowd.

6. After noodles rise to the surface, boil
gently 5-8 minutes or until tender when
pressed against side of pan with spoon.

7. Remove with a slotted spoon and drain
over water, place in warm bowl.
