Vegetable Mixture:

3 cups of broccoli pieces (cooked separately and DRAIN water)
2 cups of diced potatoes
1 cup chopped onion
1 cup chopped celery
1 cup diced carrots
Cook these veggies in 1 cup of water and 3 cups of chicken or vegetable broth,
(DO NOT DRAIN water)
1 tsp celery salt
Dry parsley
Grated sharp cheddar cheese for garnish

Soup Base (Roux):

3 tbsp butter
3 tbsp flour
1 cup milk
1 cup chicken broth or chicken bouillon or vegetable broth
1 tsp salt and 1/4 tsp pepper
Melt butter add flour for paste then add milk for roux, then add chicken broth or vegetable broth, bring to boil (medium heat) until thickened.

Boil broccoli until tender, drain water and set aside, then mash broccoli.

Boil potatoes, onion, celery and carrots in 3 cups of the remainder of broth and 1 cup of water until tender – DO NOT DRAIN. Mash these veggies together with broth that they were cooked in. Add mashed broccoli, celery salt and parsley, then add the soup base (roux) stirring well.

Gently heat soup for 10 - 15 minutes. Serve with grated cheddar cheese for garnish.
