½ cup shortening
½ cup peanut butter
½ cup brown sugar
½ cup white sugar
1 egg
1 cup raw apples, unpeeled and grated
½ tsp. salt
1 ½ cups flour
½ tsp. vanilla
1 tsp. soda
1 tsp. cinnamon
½ cup nuts

Directions:

Mix shortening, peanut butter, sugars, eggs, vanilla and apples. Add dry ingredients, mix and add nuts. Drop by teaspoons on greased cookie sheet and bake at 325º for 15-17 minutes.
