3 pounds white potatoes sliced about 1/8" thick
rinse and place in a bowl of water until sauce is ready.
1/4 cup butter *
1 small onion diced
1/3 cup flour
2 1/2 cups milk
1/4 tsp chicken boullion
2 cups cooked ham diced
1/4 - 1/3 cup grated sharp cheddar cheese
1/4 tsp parsley *
salt and pepper to taste

Preheat oven to 350°F. Butter a deep baking pan and set aside. A large
covered casserole dish would be ideal.

Whisk together the milk, boullion and flour until no flour lumps remain.
Cook onion and butter over medium low until onion is tender. Add flour and milk
mixture and cook until it starts to thicken. Add in cheese and stir until it is
incorporated. Add remaining seasoning, keep in mind that the ham will
provide additional salt.
Drain the potatoes and combine with the sauce in a large bowl or the pan that
already contains the sauce.
Once all of the potatoes are coated. Place just over 1/2 of the potatoes into the
baking dish. Distribute all of the ham over the potatoes. Top with remaining
potatoes and sauce.
* Dot the surface with about 1-2 T butter sprinkle additional parsley on top.
Bake in the preheated oven for about 1 hour and 15 min. Potatoes should be
tender.
Serve hot.

If a large covered casserole dish is not available then tent the baking dish with
tinfoil. Sides that go well are fresh green beans and corn. The amount of cheese
is small because it is a flavor ingredient. This is not a recipe for cheesy potatoes
with ham.
