2 (16-oz) cans refried beans, any brand
6 to 8 slices bacon
1/2 c. chopped onion
3/4 to 1 c. grated cheese, Cheddar or Monterrey Jack

Directions:
In a large cast iron skillet, fry all the bacon; remove and drain on paper towels. In bacon grease, sauté onions until clear. Add retried beans to grease and onions. Crumble bacon and mix into bean mixture. When beans are heated through, sprinkle grated cheese on top. Cover and remove from heat. Cheese will melt while sitting..
