Turkey Chili

1 Tbsp vegetable oil
2 lbs ground turkey
1 onion, chopped
4 garlic cloves, chopped
2 Tbsp chopped cilantro
2-3 Tbsp chili powder (start with lower, add to taste)
1 Tbsp ground cumin
½ tsp cayenne pepper
1 can (28oz) chopped tomatoes with juice
2 (16 oz) cans Great Northern or white beans, rinsed and
drained
1 (16 oz) can black beans, rinsed & drained
1 (16 oz) can creamed corn
2-3 Jalapeno peppers, fresh or canned, seeded & chopped
salt & freshly ground pepper to taste

toppings 2 Tbsp chopped cilantro
Sour Cream
Shredded cheddar cheese

In lg. skillet heat oil, add turkey, onion, garlic, & cilantro. Cook until turkey no longer pink and broken into small pieces. Drain off fat.
Stir in chili powder, cumin, cayenne. Add tomatoes and juice, beans and corn. Simmer, uncovered 45-50 min. Even better next day!! Just before serving, stir in additional cilantro.

Serve with sour cream and shredded cheese.
