1 pkg Beef Chorizo
1 lb Ground Chuck
1-2 lbs Grated Cheddar Cheese
2 - 3 Cans Enchilada Sauce
1 1/2 Cups Cooked finely diced Potatoes
2 Dozen Yellow Corn Tortillas
Oil to fry Tortillas

Directions:
Directions:
In skillet pour oil about 1/2 cup and heat till hot. With tongs dip one tortilla at a time for few seconds each side, until all have been dipped. Place on paper towels.

Brown chorizo and ground chuck in skillet till browned. Drain off excess fat, transfer to ceramic or glass bowl.
Pour enough enchilada sauce to cover 13 x 9 glass baking dish. Pour a wee bit of sauce onto dinner plate where you will assemble the enchiladas, coating each side of tortilla as you do each one.
Put equal parts of meat mixture, cheese and potatoes in tortilla and roll up carefully and place in baking dish seam side down. If any mixture is left over, just disperse over enchiladas and cover with remaining enchilada sause and cheese.
Bake at 350° for 45 minutes.
Remove from oven and top with shredded lettuce, sour cream.

Everyone likes these and each can add or eliminate ingredients. We often make CCQ, Spanish rice for add ons. We prefer mild or medium sauce.
