¼ c. butter
1¼ pound chicken breasts, cut into ¾ inch cubes
3 c. sliced fresh mushrooms
1 c. chopped green onions
1 small red pepper, cut into thin strips
1 clove garlic, crushed
½ tsp salt
½ tsp pepper
10 ounces uncooked fettuccine
¾ c. half and half
½ c. butter, melted
¼ c. chopped, fresh parsley
¼ tsp salt
¼ tsp pepper
½ c. grated parmesan cheese
1 c. chopped pecans

Melt ¼ c. butter in a large skillet; add chicken pieces and cook until browned. Remove chicken reserving pan drippings in skillet. Add mushrooms and next 5 ingredients to pan drippings; sauté until vegetables are tender. Add chicken, reduce heat and cook 15 minutes or until meat is done and mixture is thoroughly heated. Set aside and keep warm. Cook fettucine according to package instructions, omitting salt. Drain. Place in a large bowl. Combine half & half, ½ c. melted butter, parsley, ¼ tsp salt, and ¼ tsp pepper; stir well. Add cream mixture to fettucine; toss gently to combine. Add chicken mixture and cheese, tossing to combine. Sprinkle with pecans and serve immediately.

I first made this in 1993 when we were living in Gulfport, MS and I was exploring recipes from Southern Living. It is delicious and a nice meal for company! We served it for the McLeans when they were visiting us in Richmond from California. I am thrilled Amelia now enjoys reading Southern Living and exploring their recipes! #southerngals
