Suji Dhokla are delicious, healthy and easy to make too. You just need to put in 30 minutes ahead of time to ferment the batter.

1 cup fine suji
1 cup yogurt
1/3 cup water (as needed)
1/2 teaspoon salt
1 teaspoon cooking oil
2 teaspoon besan
2 teaspoon lime juice
1/2 teaspoon turmeric powder
1 small green chili if you like

Steps

1. Mix all ingredients in one bowl and beat until smooth. Make sure there is no
lumps. Let it set for 15 minutes
2. Mix 1 teaspoon ENO in batter
3. Pour it immediately into a greased tray until it is at half capacity and place in steamer. Steam it for seven minutes over medium high flame. Check with fork to see it is cooked.
4. Take out tray from steamer and let it cool for 5-7 minutes.
5. Cut prepared suji dhokla into any shape you like. I usually cut into small
squares.

For Tempering

1. Heat 2 tablespoon cooking oil in a small pan.
2. Add mustard seeds, curry leaves, green cut chili and sesame seeds.
3. Sautee for few seconds then pour over suji dhokla.
4. Garnish them with chopped coriander leaves and grated coconut.
5. You can serve it with any favorite chutney you like.
