3 Eggs
2 Cups sugar
1 Cups oil
3 Cups flour (self rising)
2 Tsp Cinnamon
2 Cups grated or shredded zucchini
3 Tsp Vanilla
1 Cups chopped nuts ( optional)

Directions:

Mix all ingredients with mixer
Grease and flour 2 loaf pans
Bake at 350º for one hour

Caution: one good garden sized zucchini will make a about a hundred loaves of bread!
