Canadian Living


1 cup quinoa, cook til tender.
2 tsp olive oil
1 small onion, finely chopped
3 garlic cloves, minced
2 tsp coriander
2 tsp cumin
1 pkg cremini mushrooms, sliced
6 cups stemmed kale
1 sweet red pepper, diced
1 cup crained canned chickpeas
½ cup veggie broth
¼ tsp salt and pepper
1 Tbsp lemon juice
2 Tbsp sliced almonds, toated.

1. Sauté onions, garlic, and spices. Add mushrooms stir til soft. Add kale, red pepper, chickpeas, broth salt and pepper. Cook about 4 minutes. Stir in lemon juice.
2. Spoon over quinoa and sprinkle with almonds.
