3/4 c. sourdough starter
1 c. pumpkin puree
1 c. lukewarm water
4 1/2 c. (or more as needed) flour (I use 2 c. white and 2 1/2 c. wheat)
1/3 c. brown sugar, packed
2 tsp. salt
1 1/2 tsp. cardamon
1 tsp. cloves
1 Tbsp. lemon zest (or more to taste)
1 Tbsp. grated ginger
kosher salt for dusting

* Combine 1 c. water, sourdough starter, pumpkin puree, sugar, spices, and 2 c. of flour.
* Gently work the remaining flour in. Dough will be sticky and tough to manage with hands. Gage whether more flour is warranted.
* Let dough rest for 1/2 hour.
* Gently lift dough and fold into 3rds (like a letter for an envelope) in two directions. Set dough into a greased bowl.
* Once per hour, lift and fold dough as before. Do this 5 times (5 hours).
* Preheat oven and baking vessel with lid to 450º.
* Place dough in preheated vessel. Score the top and sprinkle kosher salt on. Cover and bake 30 minutes.
* After 30 minutes baking, take the lid off. Turn the heat down to 350º, top with a dollop of butter and bake another 30 minutes.
* Remove from baking vessel and cool on a rack, before slicing.
