"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

3 whole chicken breasts, halved, boned and skinned
1 egg
1/4 c. milk
3/4 c. seasoned bread crumbs
1/4 to 1/2 c. parmesan cheese
6 thick slices monterey jack or mozarella cheese, cut
into 3-inch strips
6 to 12 strips bacon

Preheat oven to 350 degrees. Pound chicken breasts
slightly. Beat egg and milk together in a shallow dish.
Combine bread crumbs and parmesan cheese in
another shallow dish. Dip chicken in egg mixture and
then in bread crumbs. Place 1 slice of cheese in the
middle of each breast and roll up chicken. Wrap
chicken in 1 to 2 slices of bacon. Roll again in bread
crumb mixture. Place in baking dish and bake for about
30 to 40 minutes, or to desired doneness. Drain on a
paper towel to absorb extra bacon drippings.

Personal Notes:
If bacon slices are thick, precook until transparent.
This chicken freezes well before baking. After
assembling the bundles, put in the freezer on a cookie
sheet. These are very easy to make and great to have
on hand!
