Ingredients: 3 whole chicken breasts, halved, boned and skinned 1 egg 1/4 c. milk 3/4 c. seasoned bread crumbs 1/4 to 1/2 c. parmesan cheese 6 thick slices monterey jack or mozarella cheese, cut into 3-inch strips 6 to 12 strips bacon

Directions:Preheat oven to 350 degrees. Pound chicken breasts slightly. Beat egg and milk together in a shallow dish. Combine bread crumbs and parmesan cheese in another shallow dish. Dip chicken in egg mixture and then in bread crumbs. Place 1 slice of cheese in the middle of each breast and roll up chicken. Wrap chicken in 1 to 2 slices of bacon. Roll again in bread crumb mixture. Place in baking dish and bake for about 30 to 40 minutes, or to desired doneness. Drain on a paper towel to absorb extra bacon drippings. |

Notes: If bacon slices are thick, precook until transparent. This chicken freezes well before baking. After assembling the bundles, put in the freezer on a cookie sheet. These are very easy to make and great to have on hand!
