CAKE:
2 cup flour
1/2 cup sugar
1 T baking powder
1/2 tsp salt
1/4 tsp baking soda

1/2 cup butter
2 eggs
2/3 cup buttermilk
1 tsp lemon extract
2 cup fresh or frozen blueberries

STREUSEL. TOPPING:
1/2 cup packed brown sugar
1/3 cup flour
3 T butter
1/2 cup pecans, chopped
1/2 tsp cinnamon

CAKE:
Stir together first 5 ingredients. Cut in butter until crumbly.

In a separate bowl, combine eggs, buttermilk, and lemon extract. Beat well, batter will be stiff. Add flour ingredients. Combine all.

Spread into a 13x9x2, greased baking dish.

Top batter with blueberries and sprinkle with streusel topping.

Bake at 350º for 30-35 minutes. Serve warm or cool.

STREUSEL:
Cut butter into sugar and flour until crumbly. (Like beach sand). Stir in nuts and cinnamon.
