® Carolyn’s Famous Pork Chow Mein aka Stir Fry
Carolyn & Hardy’s obsession for Chinese Food was amazing. Dad’s mother “Minnie” was a cook at Sui Yep Cafe on Payne Avenue in St. Paul.

As a child, I remember numerous times we’d pile into the car and Hardy would drive miles to frequent one of his favorite Chinese food eateries. We would bring home leftovers and eat them for days, before microwaves.
My first attempt and making this dish was when I just moved into Sternlee with Rob & Rick. My turn to cook, “Gary, will we eat before the news? Johnny Carson’s on at 11:30…”
Ingredients:
• Vegetables: red bell pepper, yellow bell peppers, sugar snap peas, carrots, mushrooms, broccoli, baby corn, water chestnuts, bamboo shoots, bok choy, asparagus, red onions.
• Sauce: soy sauce, garlic cloves (minced), sesame oil, chicken broth, cornstarch, Kitchen Bouquet.
• Meat: pork steak
• Olive Oil
The first step is to cook up your pork steak, cut pork steak into bit size pieces, brown in the wok on high heat with olive oil & a little chili garlic sauce, remove from the wok. Veggies- I used a combination of red and yellow peppers, snow peas, broccoli, carrots, asparagus, onions, mushrooms and bok choy. I also added some baby corn, water chestnuts & bamboo shoots into the mix for variety. While the veggies are cooking (cover the wok), whisk in a 2-cup measuring cup, combine 1 can of cream of mushroom soup with same amount water, a heaping teaspoon of chili garlic sauce, and 2 tablespoons of Kitchen Bouquet. You may need to add a bit more Kitchen Bouquet/corn starch for thickening. The sauce gets poured over the veggies then is simmered until thickened, add pork and simmer. Don’t simmer too long as to make the veggies too soft. Adding chopped cashews to the top once plated is an added bonus.

You can enjoy your pork stir fry as-is, or over rice. Now, enjoy The Johnny Carson Show.
