8 cups whole milk
½ tsp salt
5 Tbsp vinegar

In Dutch oven heat milk with salt over low heat, stirring often, until temperature is 203º F (95 C), about 40 minutes.
2. Add vinegar, stir slowly 3 times. Remove from heat and let stand 20 minutes.
3. With slotted spoon, skim off curds and place in sieve lined with double cheesecloth. Let drain for 30 minutes.
