4-6 medium potatoes cut in small cubes
2 Tbs. olive oil
4 garlic cloves, crushed
1 teaspoon paprika
1 teaspoon sugar
1 teaspoon salt
For Serving:
Small Corn Tortillas
Freshly chopped cilantro

Optional:
Salsa
Sour cream

Usually this dish is used as breakfast or lunch dish.

For lunch or even a dinner dish.
you can add:
1/2 lb ground beef mixed with 1/2 lb of ground pork; or 1 lb of ground beef
or for a healthier version you can add 1 lb. of ground turkey

Directions:
In a large skillet, drizzle olive oil over medium heat. Once heated, add garlic. Cook until just fragrant, about 30 seconds.

(For the meat version, you add the meat first and when the meat is almost done)

Add the potatoes, then toss with paprika, sugar, and salt.

Cover and cook, stirring about twice, until potatoes are tender, 15-20 minutes.


Serve immediately in corn tortillas. Top with cilantro.

If desired, top with salsa or sour cream.

(I heat the tortillas in a skillet or place them on top of the meat, for a few minutes, until soft before served them.)
