Crust:
1 package graham crackers
4 Tbsp melted butter
1/4 tsp salt
2 tsp brown sugar

Cheesecake Batter:
2/3 cup sugar
1/2 cup sour cream
2 Tbsp corn starch
1/4 tsp salt
16 oz (2 - 8 oz packages) cream cheese
2 tsp vanilla
2 beaten eggs

Topping:
1/2 cup sour cream
2 Tbsp sugar

Crust
- Crush graham crackers
- Add brown sugar
- Mix in melted butter
- Pack into cheesecake oiled cheesecake pan (place parchment on bottom)
- Place in freezer while preparing batter

Cheesecake batter:
- Ensure cream cheese is room temperature (heat in microwave for 30 seconds if cold)
- place all ingredients in a mixing bowl & beat until smooth.
- Pour mixture on top of crust.
- Add 1 cup of water into Instant Pot. Place cheesecake pan on trivot in Instant Pot.
- Pressure cook for 28 minutes. Natural release for 10 minutes.
- Remove from Instant pot and dab edge with paper towel to remove excess water.
- Mix 2 heaping Tbsp sour cream & 2 Tbsp sugar together & pour on top of cheesecake.
- Refrigerate for 4 hours or longer (best overnight)
- Serve
