3 Eggs
1 c. Sugar
⅔ c. Pumpkin
1 tsp. Lemon Juice
c. Flour
1 tsp. Baking Powder
2 tsp. Cinnamon
tsp. Nutmeg
tsp. Salt
1 tsp. Ginger

**Filling**
6 oz. Cream Cheese, room temp.
4 tbsp. Butter, room temp
tsp. Vanilla
1 c. Powdered Sugar

Directions:
Directions:
Preheat oven to 350. Prepare jelly roll pan with aluminum foil that has been greased.
Beat eggs on high for 5 minutes. Slowly add sugar. Stir in pumpkin and lemon juice. Stir in flour, baking powder, cinnamon, nutmeg, salt and ginger. Spread on prepared pan. Bake 15 minutes. Allow to cool

**Filling**
Cream butter, cream cheese and vanilla. Slowly add powdered sugar. Nuts to taste. Spread filing on cooled cake. Roll up and sprinkle on powdered sugar. Refrigerate.
