Ingredients: 4 tsp liquid smoke 2 tsp salt 1 clove garlic, pressed dash ground pepper 2 tsp canola oil 1/2 c water 1/4 tsp onion powder 1/4 tsp fresh parsley, minced
2 - 16 oz steaks, rib, T-bone
Topping: 2 T butter 2 c sliced mushrooms 1 T diced roasted red pepper 1 T sun-dried tomato, diced 2 slices bacon, cooked and crumbled pinch fresh parsley chopped pinch dried thyme salt 1/2 tsp vinegar

Directions:Combine all ingredients for the smoky marinade in a medium bowl. Pour the marinade over the steak. You may want to use a large sealable bag for this. Marinade meat at least 4 hours, but overnight is better.
Preheat barbecue.
As the barbecue heats, sauce mushrooms, peppers and tomatoes in butter over medium heat in a large skillet. Saute for 5 minutes or until mushrooms begin to turn brown on the edges. Add bacon, parsley, thyme, salt and vinegar to the mushrooms and keep warm over low heat until steaks are done.
When your grill is hot, cook steaks for 3-5 minutes per side or until done to your liking.
Cooking Chart: 4-6 minutes per side - Rare 5-7 minutes per side - Medium rare 6-8 minutes per side - Medium 7-9 minutes per side - Medium well 8 - 11 minutes per side- shoe leather
Top Steaks with mushroom mixture and serve. |
