"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 pork roast
1 jar sauerkraut
1 large onion, sliced
salt and peper to taste

Directions:
Directions:
Place the roast fat side up in a roaster or crockpot. Salt and pepper to taste. Place sliced onions over the top of the roast and cover with sauerkraut. Roast until pork reaches temperature and is tender to the fork.

I like to do mine in the crockpot and cook 6 plus hours until the meat falls off the bone.

You can add potatoes and carrots a couple hours before the roast is done.
