"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
3 c warm water
1 T yeast (1 pkt)
1 tsp salt
1/4 c sugar
7 c flour

Directions:
In a large bowl; combine yeast, water, sugar and salt. Let stand for 5 minutes. Stir in the first three cups of flour with a heavy spoon. Add next cup of flour a little at a time, as needed, stirring until dough becomes too stiff to continue stirring easily. Add a little more flour and begin kneading. The amount of flour is approximate - your mileage may very! Continue adding flour and kneading until dough is smooth and elastic. Let dough rise in a greased, covered bowl until double in size; about 1 hour.

Uncover bowl; sprinkle a little more flour and knead again before dividing in half. With floured hands, shape dough into two loaves and place in two greased loaf pans. Grease the tops of the dough and sides of the pan with butter or shortening to prevent dough from sticking when it rises in the pan, cover loaf pans. Let rise till loaves are tall and beautiful; about 1 hour, depending on the temperature in your kitchen.

Bake in a preheat 350º oven for 25 minutes.
