Lemon Butter Sauce Recipe

Ingredients: 1½ sticks cold unsalted butter, sliced into ½ inch pieces 2 T. minced yellow onion 2 minced garlic cloves ⅓ c. dry white wine (sub chicken broth for non-alcoholic version) 3 T. fresh lemon juice salt & pepper (preferably white pepper) to taste

Directions:Place a medium non-stick skillet over medium heat and add 1 chunk of butter. Add onion and garlic to melted butter and cook about 3 minutes, stirring frequently. Increase heat to high and add wine and lemon juice; bring to a boil and cook until liquid is reduced to about ¼ c., 3 to 5 minutes.
Reduce heat to low, add 3 chunks of butter and whisk until it is completely melted. Add 3 more chunks and continue until all butter has been added. This process should be done over LOW heat and the butter will melt slowly and emulsify when whisked. When all butter is melted, season with salt and pepper and remove from the heat.
Sauce may be served immediately or will keep at room temperature for up to 2 hours. |
