4-5 lbs russet potatoes, peeled and sliced thinly
1 onion, sliced
3 T flour
3 T butter
2 tsp salt
Pepper
1 cup chicken broth
1 cup sour cream
1 cup heavy cream
1/2 cup Parmesan, grated
1 cup jack cheese, grated
1 cup cheddar, grated

TOPPING:
1/2 cup Parmesan, grated
1 cup jack cheese, grated
1 cup cheddar, grated

Directions:

Preheat oven to 350º

Arrange sliced potatoes upright in rows, in a 9x13 baking dish.

In a saucepan, melt butter, add onion. Cook for 5 minutes. Add flour and cook for 1-2 minutes, whisking constantly. Add salt and pepper, broth, cream and stir about 3 minutes.

Turn off heat and add cheeses. Stir and set aside.

Spread sour cream over potatoes and pour warm cheesy mixture over the sour cream.
Sprinkle “topping” cheeses evenly over entire mixture.

Cover potatoes with foil and bake for 1 hour. After one hour, remove foil and bake uncovered for an additional 30 minutes.
