2 boneless, skinless, and trimmed chicken breasts
5 to 6 cups chicken broth
1 carrot, peeled and thinly sliced
1 stick celery, chopped
2 teaspoons minced onion
1/2 package (8 oz., full bag is 16 oz.) Kluski-style noodles (thick noodles)
1 (14 oz.) can cream of Chicken soup (not light version)

Simmer chicken breasts in broth for about 25 minutes. Remove chicken from broth; set aside to cool. Add carrots, celery and onions to broth and cook for 10 minutes. Add noodles, turn off heat, cover with lid and let it sit for about 20 minutes. Cut up chicken into small pieces. After 20 minutes, add chicken, can of soup (don't add milk to it) and dash of pepper to broth mixture. Stir till well-blended and serve.
Can use any type of noodle, just watch that they don't become too mushy.

This is from one of my oldest friends, Sandy Smolley, and is a popular soup in our family. Are you sick? Eat Aunt Sandy's soup. Too tired to cook? Ditto. She died almost three years ago and this keeps our memory of her alive.
