2 rolls of ritz crackers
1 c peanut butter, creamy or chunky
1 c powdered sugar
1 bag of melting chocolate for dipping or any chocolate chip

Directions:
Directions:
1. in a bowl combine peanut butter and sugar, mix well
2. take a ritz cracker and spread a small amount of the peanut butter mix onto the cracker and place another ritz on top, repeat for as many cookies as you would like to dip into the chocolate.
3. in double broiler, melt the chocolate or melt the chocolate in your microwave by placing the chocolate into a microwavable bowl and cover with plastic put 1 minute at a time, checking and stiring in between and making sure not to scorch the chocolate. If using chocolate chips you will want to add a little heavy cream or even a little whole milk for melting. Start with a teaspoon at a time.
4. cover wire racks with parchment paper
5. move the ritz cookie by the stove area, where the chocolate is being kept warm, dip the cookie into the chocolate covering both sides, use a fork as a dipping tool, place cookie onto parchment paper and let cool completely, several hours
6. place cookies into a container that has a cover and place into the refrigerator for up to 6 months.

These cookies do take a lot of time to make...but they are so worth it and I haven't found one person that doesn't like them. But if there is someone you know who has food allergies or doesn't like peanut butter; you can replace with nutella butter.
