1 head cauliflower of about 6 cups florets or 4 cups cauliflower rice

1/3 cup coconut flour or choice flour (40 grams)

1/4 tsp salt

6 ounces uncured bacon

1 1/2 lbs ground beef or turkey

1 tsp onion powder

1 tsp oregano

1 tsp garlic powder

1 tsp salt

1/2 gsp pepper

SAUCE:

1 Tbs butter

1 Tbs coconut flour or choice

1 1/2 cups heavy cream

2 Tbs yellow mustard (spicy brown may be used)

8 ounces sliced organic 100% cheddar cheese (use shedded covers better)

Directions:
Directions:
1. steam cauliflower until fork tender. (skip if using cauliflower rice)

2. place into food processor and pulse until resembles rice.

3. Set aside in a bowl to cool then add the coconut flour and salt and mix well.

4. cook the bacon in a large skillet until moderately cooked, but not crisp.

5. remove bacon with a slotted spoon to keep bacon juice in skillet.

6. transfer bacon to paper towel line plate to cool. once cool chop into pieces.

7. add the ground beef to same skillet and cook til browned.

8. add onion powder, oregano, garlic powder, salt and paper and mix well.

9. remove the beef with a slotted spoon and transfer to a bowl. (remove 2 tubes of grease).

10. preheat oven to 350º.

Sauce:

1. add the butter to the same skillet and stir in the flour over low heat. Cook until the flour has absorbed the butter then add heavy cream and mustard.

2. continue to cook on low heat until sauce thickens.


Place 1/2 cup of sauce on the bottom of 9 x 13 baking dish.

Spread the cauliflower mixture on the sauce...spread as evenly as possible.

Place 4 oz. of sliced cheddar over the cauliflower.

Spread the ground beef over the cheddar evenly.

Pour half of the remaining sauce over the beef.

Place the remaining cheddar over the sauce.

Pour the remaining sauce over the top and sprinkle with bacon.

Cover and bake at 350º for 30 minutes.

Uncover and bake an additional 5 minutes.

Allow to cool out of the oven for 15-20 minutes before slicing and serving.

I would use less cauliflower ( used 2 bags before) and more cheese and seasonings next time.
