2-3 boneless Skinless Chicken breasts
1 Large can Cream of chicken Soup
1 Large Can Cream of mushroom soup
1 small can Golden Mushroom Soup (optional) or ½ Tbsp. tomato paste (also Optional)
1-2 packets of Lipton Onion Mushroom Soup mix
1 Tbsp. Tim's BBQ Seasoning
French Fried Onions (optional)
2 Cups of rice
Salt and pepper to taste

Cook rice. I use a rice cooker with the rice and enough water to cover the rice and another ¾ of an inch. As the rice is cooking, Cut the chicken into bite sized pieces and brown in a large skillet. Add BBQ Seasoning to taste. Add the Cream of Mushroom soup, Cream of Chicken soup and golden Mushroom or Tomato paste (optional) along with one packet of Lipton soup mix and stir to combine. Reduce heat and allow to simmer stirring often for about 5 minutes for flavors to combine. Add salt and pepper to taste.
At this time you may serve it over rice for a quick meal. However to take it up a notch by following the next few steps.

Mix the rice and Chicken mixture and put in a 9-13 baking dish. Cover the top with French Fried Onions and another packet of Lipton Onion Mushroom Soup mix or Lipton Onion Soup mix. Bake at 350º F for 15 minutes until the onions on top begin to brown.

This recipe is good for a quick dinner or to bring people together. One day, one of our neighbors was moving in. Tim noticed that they were all alone (just Mom and Dad and two little girls). Tim walked over, picked up a box and asked "Where do you want this?" The family told Tim and he began helping them move in. Several other people in the neighborhood saw Tim helping and also joined in, helping the new family move in. While we were moving them in, Kim and one of the other women began making a big batch of this meal. The family was completely moved in about an hour later and we all met at one of the neighbor's house for a big "Welcome to the Neighborhood" dinner. This was one of those moments that makes life worth living.

Another time we were hosting 2 members of the African Children's Choir as they came through town. We made a normal sized batch of this meal and as we set the bowl on the table the children looked on in wonder and one of them said," WOW! Look at all this food!" It kind of puts our life in perspective when something that we view as routine is a wonder to others.
