4 cups diced rhubarb
1 1/2 cup sugar
3 Tablespoon cornstarch -or- 1/4 cup quick cooking tapioca
3 egg yolks
1 tablespoon butter
1/4 tsp cream of tartar

Directions:
Directions:
Rhubarb, sugar, and tapioca (or corn starch) mixed
Add egg yolks
cook until rhubarb is tender.
Stir in tablespoon of butter
pour into a baked pie shell.

Merengue (topping)
3 stiffy egg whites (beat egg whites until stiff) and gradually add 6 tablespoons of sugar, 3 tablespoons of water, and 1/4 tsp cream of tartar. Beat until stiff and add to top of rhubarb custard.
