1/2 cup sugar
1 egg
1/4 cup butter, softened
1 cup sour cream
1 tsp. rum extract
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 8 oz. can crushed pineapple, drained
1/2 cup shredded sweetened coconut

Directions:

Preheat oven to 350F. Beat sugar, egg, butter, sour cream and rum extract until combined. Add flour, baking powder, baking soda and salt. Add pineapple and coconut. Stir. Add 12 cupcake liners to muffins. Fill about 3/4 way full with muffin batter. Bake for 25 minutes or until a toothpick comes out clean. Cool on a cooling rack. Makes 12.

These muffins are Paul’s new favorite! To pretty them up, I made a topping using 1 Tbsp. melted butter, 2 Tbsp. sugar and 1/2 C. coconut. Combine ingredients and sprinkle on top of muffins and top each with a well drained maraschino cherry.
