Personal Notes:
This is a McCoy family favorite. My mom made this recipe our whole lives. We mostly made it in a 9 x 13 pan and didn’t always make the icing. It is very good without the icing. It came out of a small recipe book titled “Mountain Cookbook” by Ferne Shelton. It looks like they picked it up on one of their trips to the Smoky Mountains.
