3 C All-purpose flour
1-3/4 tsp salt
1/2 tsp yeast
1-1/2 C water

Oven-proof pot and lid. Cast iron works great.

In a large mixing bowl, whisk together the flour, salt and yeast. Add water and mix until a shaggy mixture forms. Cover the bowl with plastic wrap and set aside for 12-18 hours or overnight. The next day, heat oven to 450 degrees. When the oven has reached 450, place the pot and lid in the oven for 30 minutes to heat.
Meanwhile, pour the dough onto a heavily floured surface and shape into a ball. Re-cover the dough and let it sit while the pot heats. Carefully remove the hot pot and lid from oven and drop in the dough. Cover with the lid and return to the oven for 30 minutes. After 30 minutes, remove the lid and bake for an additional 15 minutes. Remove bread from the oven and place on a rack to cool.

This loaf of delicious, crusty bread has never failed me. It requires no kneading or skill and very little time, besides the overnight wait. It does not make a big boule, however, so share it with only your favorite people. Great with butter, cheese or nutella.
