1-1/2 C flour
1 C sugar
3/4 C unsweetened cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 C applesauce
1 egg
1/4 C oil
1/4 tsp almond extract
1/2 C white chocolate chips

Directions:

Preheat the oven to 350 degrees. Grease a muffin tin. Whisk together the dry ingredients in a large bowl (flour through salt). In a separate bowl, mix the wet ingredients until blended. Stir the wet ingredients into the dry ingredients and stir in the white chocolate chips. Do not overmix. Divide the batter between the 12 muffin cups and bake for approximately 20 minutes.

I was waiting for a pregnancy check-up with Isaiah when I copied this recipe from a magazine onto the green handout titled "Weeks 33 to 37" that they gave me at the doctor's office. I remember thinking that it sounded yummy and healthy, because of the applesauce. It is a great blend of flavors and one of the better muffin recipes I have ever found.
