2 cups finely grated carrots
1/2 cup chopped water chestnuts
1/4 cup green pepper, chopped
1/4 cup green onions, chopped
1 garlic clove, minced
2 cups cooked chicken, finely diced
4 tsp cornstarch
1 T water
1 T soy sauce
1 tsp vegetable oil
1 tsp brown sugar
Pinch cayenne pepper
16 egg roll wrappers

These are baked, not fried!

Preheat oven to 425º

Spray a large skillet with cooking oil or cooking spray. Heat on the stovetop, add first 5 ingredients and cook until crisp and tender. Add the cooked chicken pieces.

Combine the cornstarch, water, soy sauce, oil, brown sugar and cayenne in a small mixing bowl. Add contents to the chicken mixture in the skillet. Increase heat and bring to a boil. Cook for 2 minutes until sauce is thickened. Remove from heat.

Spray a cookie sheet with cooking spray. On a chopping board, layout egg roll paper. Spoon ¼ cup chicken mixture on the bottom third of 1 egg wrapper, fold sides toward center and roll tightly.

Place seam side down on a baking sheet. Repeat process for all wrappers.

Lightly spray the tops of egg rolls with cooking spray to avoid burning. Bake for 10-15 minutes or until golden brown.
