1 C flour
2 1⁄2 tsp baking powder
1⁄2 tsp salt
1⁄2 C creamy peanut butter
2 Tbsp sugar
2 Tbsp vegetable oil
1 egg
1 C milk
2 Tbsp milk
Chocolate chips (optional)
Banana slices (optional)

Directions:

In large bowl mix together flour, baking powder and salt. Set aside. In small bowl, whisk together peanut butter, sugar and oil until smooth. You might find you need to heat the peanut butter slightly to get it to mix. Beat in egg, then milk. Pour the milk mixture into the flour mixture, stirring just until blended. Stir in chocolate chips if desired. Lightly coat griddle or skillet with oil and heat it over medium-high heat.
Drop batter onto the griddle and cook until tiny bubbles appear on the surface of the pancake, then flip and cook a few minutes more. Top with banana slices if desired.

This recipe was in Family Fun magazine many years ago. We came to love it, especially for getting extra protein into the toddlers. We even included it in our Christmas letter one year. Don't worry about the batter being too thick, the pancakes cook up puffy and delicious.
