1 egg, beaten
1 ¾ C milk
½ C packed brown sugar
1 C rolled oats
2 tablespoons butter
Optional toppings:
Chocolate chips, butterscotch chips, your favorites
Coconut (preferably toasted)
Chopped pecans, other favorite nuts
Wheat germ

In a saucepan over medium heat, whisk together the egg, milk and brown sugar. Mix in the oats. When the oatmeal begins to boil, cook and stir until thick. Be careful; it wants to burn. Remove from the heat, and stir in butter until melted. Serve immediately with toppings on the side.

This recipe was originally called Butterscotch Oatmeal from allrecipes.com. By itself, it is amazing, but the toppings make it a giant cookie in a bowl. When you are at a loss about what to make for dinner, this will do a bang-up job. Just eat some vegetables later.
