2 Tbsp butter
3 eggs
½ C all-purpose flour
½ C milk
¼ tsp salt
Fresh lemons
Powdered sugar

Preheat the over to 400 degrees. Put the butter in an ovenproof skillet or pan. We always use well-seasoned cast iron. When the oven is preheated, place the butter and pan into the oven until the butter is melted (about 3 to 5 minutes). Be careful not to burn it. In a bowl, beat the eggs with a rotary beater until combined. Add the flour, milk, and salt, and beat until smooth. Pour the batter into the hot skillet/pan. Bake for about 20-25 minutes or until puffy and brown. Top with fresh lemon, squeezed, and powdered sugar.

Seth's Grandmother Ruth used to make these and we started making them a few years after we were married on special mornings. They are so easy, impressive and delicious. You can usually fit two in the oven at once. They are also called Dutch Babies.
