Ingredients: 1 lb. Italian sausage links 1 lb. ground chuck 2 medium onions, chopped 5 cloves garlic, minced 2 - 15 oz. cans tomato sauce 16 oz. can diced tomatoes, undrained 12 oz. can tomato paste 1½ tsp. dried whole oregano 1¼ tsp. dried whole basil 1 tsp. sugar ½ tsp. salt ½ tsp. pepper ½ tsp. dried whole thyme ½ tsp. dried whole rosemary ¼ tsp. dried whole marjoram ⅛ tsp. red pepper 16 manicotti shells 8 oz. pkg. cream cheese, softened 3 oz. pkg. cream cheese with chives, softened 4 cloves garlic, crushed ½ tsp. pepper ½ tsp. dried whole thyme ½ tsp. dried whole oregano 16 oz. container ricotta cheese 4 c. (16 oz.) shredded mozzarella cheese ½ c. grated Parmesan cheese

Directions:Remove sausage from casing; crumble. Combine sausage, beef, onions and minced garlic in a large Dutch oven. Cook over medium heat until beef is browned, stirring to crumble; drain well. Add tomato sauce and next 11 ingredients; bring to a boil. Cover, reduce heat, and simmer 2½ hours, stirring occasionally. Cook manicotti shells according to package directions. Combine cream cheeses and next 7 ingredients in a large bowl; stuff mixture into shells. Spoon half of sauce into a lightly greased 14 x 11½ x 2¼ inch baking dish or 2 lightly greased 2½-quart shallow casseroles. Arrange stuffed shells over sauce. Spoon remaining sauce over shells. Bake at 350º for 30 to 40 minutes or until heated. Let manicotti stand 5 minutes before serving. |
